Symon Says Chicken Goes Perfect with Olives and Orange

This recipe came out of a five ingredient cookbook by Michael Symon that I got out of the local library many months ago. The combination of olives, tomatoes and orange is very Mediterranean and a tummy warming bundle of yummy flavors. Don’t leave any of those three ingredients out; they are crucial to a great result. olivesYou gotta love how short the list of stuff to buy is. Well, this dish actually uses eight items but olive oil, garlic and red pepper flakes are three staples I (and most cooks) keep in the house all the time. So it is five, sort of! I had everything on hand but the chicken so I was in business after a stop for some high quality chicken thighs.

Chicken is a regular protein choice for dinner at my house, inexpensive, easy to make and it takes on the flavor of whatever you put it with. The thighs are my favorite chicken part as they stay moist and have a bit more flavor than breasts. Canned chopped tomatoes have great tomato flavor and are so convenient as well as pretty inexpensive.

I used a bit less olive oil than the original recipe – seemed like half of the quarter cup was quite enough. I have made this about 3 times in the past year. I believe the original recipe was made with boneless chicken thighs but I prefer them bone in. If you like boneless; cook it five minutes less. I stuck a thigh with my instant read thermometer and knew the poultry was done. Totally takes the guess work out.

This recipe is a keeper: it meets my criteria of inexpensive, quick to put together, gluten free and great tasting. That’s the quartet of food greatness in my recipe world. And that is why I am sharing it with you today!

Symon Says Chicken with Orange and Olives

Ingredients

2 tbsp. extra virgin olive oil
4 chicken thighs (if small; 5-6)
2 sliced garlic cloves
1-2 tbsp. chopped fresh rosemary
1 14 ounce can chopped tomatoes
Grated zest and juice of one fresh navel orange
A pinch of red pepper flakes
1 cup chopped Kalamata olives (I opened a can of regular black ones and cut them up roughly – in half is fine)

In a dutch oven heat the oil, add the chicken, skin side down, cook 8 minutes, turn using a pair of tongs, cook 8 more minutes. Add olives and rosemary; cook one minute. Add a half cup of water to de-glaze the pan and then add the rest of the ingredients. I like to hold half the olives and add them at the end, especially if you use the canned black olives which are softer than kalamata olives. Cook 20 minutes, test for doneness and add 5 more minutes if needed.

I served my chicken over a baked red potato, cut open and sliced somewhat. With a simple green salad you have a super supper. There is very little active time spent making this; but you can’t leave it alone for more than 8 minutes while each side browns. Still, dishes can be done, kitchen tidied or other chores completed while the chicken thighs brown. The dish goes together in just a few minutes of chopping garlic and olives. In a rush I have been known to tip the olives into a measuring cup and just cut with a paring knife stuck in the cup to roughly chop the olives.

It is also nice with pasta; gluten free ziti comes to mind. Even rice would be great with this flavorful and naturally gluten free main dish.

Spicy Chicken Tenders, GF and Totally Tasty

There are a lot of commercial food items that I don’t get to eat anymore, specifically most fast food being a major no no.  I miss crispy chicken like I used to enjoy at Wendy’s.  When I saw this recipe referenced on facebook I immediately went to the site, read the recipe and decided I had to try it.  I had some chicken breast tenders and all the ingredients except the gf Bisquick.  I looked on Glutenfreeonashoestring and lucky me; she has a recipe for making your own gf Bisquick; it is attached to a recipe for mini breakfast pancake bite muffins. I had the flours needed; white rice, potato starch and tapioca flour plus the add ins of baking powder, baking soda, salt, and sugar.  Easy peasy to put a double batch together; I will keep it in my freezer in a Ziplock freezer bag; sure have been wanting some of that Bisquick! bisquick

I lowered the hot sauce to half, ditto for the cayenne powder as I was pretty sure I didn’t want it so spicy; do as your taste buds wish. It was simple to do; mix the spices with the Bisquick, mix the hot sauce with the water, dip the chicken in the spices, then the hot water and back in the spiced flour and fry. It was almost like deep frying but not quite.  Not something I would eat every week but it sure was yummy!

I didn’t eat it as a sandwich the first time; had two juicy tenders with a baked potato and some summer squash.  It was very tasty and not too spicy for me.  I had it in a gf bun for a meal, complete with lettuce, tomato and mayo, and it was wonderful. I think this is well worth trying even if you just buy some gf Bisquick.

Gluten-Free Spicy Chicken (like Wendy’s)

2-3 Tbsp. Frank’s Red Hot Sauce

1/2 c Water

1/2 c Gluten-Free Bisquick

1 Tsp. Sea Salt

1-2 Tsp. Cayenne Pepper

1/8 Tsp. Fine Ground Pepper

1/4 Tsp. Paprika

1/4 Tsp. Garlic Powder

1 lb. Chicken Breast tenders – pound them a bit if they are very fat; you want it ½ inch or thinner. I didn’t pound mine and they were fine.

1 cup frying oil; canola, peanut oil are two that I can suggest

Directions:

Mix together the Gluten-Free Bisquick, Salt, Cayenne Pepper, Pepper, Paprika and Garlic Powder in a low bowl.  I used a soup bowl.

In a separate cereal bowl mix together Frank’s Red Hot Sauce and water. In a  high-sided sauté pan heat 1 cup of canola oil – it should come up about 1/2 inch the side of the pan depending on the size of your pan. I started it on medium heat and put in a candy thermometer to regulate the temperature; I got it pretty hot; 350 degrees before putting in the chicken.

Take one chicken breast tender at a time and dredge it in the GF Bisquick mixture, then roll it in the hot sauce/water mixture and then put it back in the Bisquick mixture and roll it to coat. I slid one into the hot oil and then a second one. Cook chicken for about 5 minutes, until they are golden brown and no longer pink in the center (I used a meat thermometer just to make sure).

Remove from the oil and drain on paper towels to blot any excess oil. If you have the oil hot enough they shouldn’t be greasy. If you want a sandwich, serve on a gf bun and top with mayonnaise, tomato and an additional piece of lettuce.

Hot Day -Slow Cooker Rotisserie Chicken Revolution!

Hot days of late, too hot to roast a fricken chicken.  No gluten free rotisserie chickens around here that I know of.  What to do if we crave roast chicken and don’t want to heat the house too?  It’s Super Slow Cooker to the rescue!  This is so easy, an eight year old could do it! You make a dry rub of spices, sprinkle all over the bird and stick some under the skin.  Plop it in the pot and let er rip for 4 plus hours.  How did it turn out? Great! Mildly spicy, flavorful, moist and tasty.  Best of all: no hot kitchen.  I ate it that night with some leftover potato salad and some veggies.  I think you could add more garlic, more spices or whatever you like to make different versions. Note to self; try a new version every time I make this bird and share my findings with you later this summer!

The next night I created a big salad of many veggie things with my homemade rotisserie chicken breast as the star ingredient.  Two nights later another salad with different veggies and more of the fabulous chicken topping it.  Then a day later I made a simple stir fry with pad Thai noodles, broccoli florets, fresh ginger in thin strips, zuke half moons, fresh pea pods from the garden, onion and a diagonally sliced carrot.  Oh and I used the rest of the chicken breast for the protein in it. The rest of the stir fry: I enjoyed a nummy good cold Thai salad for lunch the next day: I just added a bit of sesame oil and it was ready! Awesome!  No oven needed. Or wanted!

It is from my much thumbed through slow cooker cookbook by Carla Forbes. I know you will be pleased with how cool your kitchen stays and that it is safe for us gluten intolerant types.  For some reason most stores that sell rotisserie chicken add some gluten in the process.  I am guessing it is in the spice blend as is often the case with such flavor blends.  In any case, your homemade rotisserie chicken will be safe and succulent! And for anyone who doesn’t worry on gluten; well, this is a tasty dish you will love to have in your arsenal of hot weather entree choices.  I used a fat Wegman’s chicken and it sure has great flavor and texture for a decent price.

Ready to eat and full of rotisserie flavor!

The bird is in the slow cooker and ready – has its olive oil drizzle! Here are some chunks of breast meat ready to be chopped up for the big supper salad.

Hot Summer Rotisserie Chicken

1 four pound whole chicken, rinsed and patted dry

2 tbsp. olive oil

————–

Spice blend: mix in a small dish

1 ½ tsp sat

2 tsp. paprika

½ tsp. onion powder

½ tsp. dried thyme

½ tsp. dried basil

½ tsp. white pepper

½ tsp. cayenne pepper or hot chili powder

½ tsp. black pepper

½ tsp. garlic powder

Directions: Remove any giblets and dispose of them how ever you like.  Just not gonna use them in this recipe! Or any I provide.  Ick!  Rinse the bird and pat dry with a couple paper towels.  Rub the spice mix all over the bird, pull back some breast skin and sprinkle the mix in there.  Sprinkle any extra inside the bird.  Place bird breast up in your six quart oval (not so good in round one!) slow cooker.  Drizzle the olive oil on top of your bird; all over it.  Cover and cook 4-5 hours on low or 3.5 on high.  I did 4 on low and turned it up to high for 45 minutes at the end. My bird was close to 5 pounds so I felt it needed a bit more cooking.

My recipe said you could make gravy: remove the bird and add 1/3 cup brown rice mixture flour and stir well to blend it into the pan juices and naturally created chicken broth.  Add salt and pepper to taste; cook on high for 10-15 minutes. I didn’t do that; next time!

I ate some slices of hot breast meat with potato salad that night (so so tender and moist!) and put the rest of it into a big batter bowl that has a lid.  Once it was cooled somewhat the bird went into the refrigerator to keep fresh and flavorful.  The broth soaks in and adds even more flavor as it rests in the cold fridge.

I have no picture of the done bird whole and uncut.  I was so hungry the first night I dug in and totally forgot to take one; next time I made it I will snap a few and upload to this post.  It looks like your regular rotisserie chicken if not as dry or dark skinned.

Pulled Chicken Barbeque: Tender, Easy and Tasty!

My kingdom for a simple but tasty gluten free pulled chicken barbeque recipe!  Well, maybe just a hearty thanks: to my friend Niki for her recipe inspiration.  This is so easy, only a few ingredients and fantastic results; it is a slow cooker recipe; the perfect method for effortless, falling apart and  mouth watering barbeque.

Mix it all in the slow cooker and four hours later it is ready, no sweat, no mess and the kitchen isn’t much warmer despite making this great dish.

If you hate dark meat; make it with chicken breast; will be done in less time of course; maybe 2-3 hours?

For a change I bought some gluten free roll made by Schar; their classic white rolls.  The package says new recipe and they are much better than I thought they would be.  Each held their shape, decent flavor: fantastic full of barbequed chicken thighs.  I also had a burger in one of the four buns and it held together nicely.  Schar has occasional coupons; I used one I got on line when I bought them for this meal and ended up paying $.50 a roll which is really cheap for gf rolls.

One third to half a bottle of gluten free barbeque sauce; Sweet Baby Ray’s is the barbeque sauce I use these days, nice smoky tang to it.  I think you could easily double this to 5 lbs of chicken.  I am planning to make it for my next summer gathering; just so easy and the no grill, no oven, no fry is awesome for summer meal planning.

Niki’s BBQ Pulled Chicken Thighs

2 ½ lbs boneless chicken thighs

1/3 to half a small bottle of barbeque sauce

2 tbsp. cider vinegar

1 medium onion, diced

1 tsp. Dijon or whole grain mustard

2 tbsp. water

Directions:

Dump all but chicken in the slow cooker, stir, add chicken thighs; skinless is my preference.  Cover and cook on high for 3.5 to 4 hours. If you are around stir it once half way though and flip the chicken over. When done, turn off the slow cooker and break up the meat while still in it: I used a wooden spoon. Serve in a bun: mine was Schar’s classic white.  Use what ever bun you like! And of course, I used gf barbeque sauce.  Be sure it is a quality sauce you are fond of or the results will not be happy! Just like cooking with wine; use ingredients you would enjoy all on their own.  This recipe is a home run on a busy summer day.  Pair it with a salad or two and you have a great meal for four; double it to serve eight.

Simply Smashing Slow Cooker Citrus Chicken

I really love my new slow cooker with a timer and that great oval shape.  I have made some really yummy suppers in it.  As I have said before, I am not a fan of overcooked vegetables so I am rather choosy in what I make if it has to cook for 4 hours.  This citrus chicken is a variant on a recipe in that gf slow cooker cookbook by Carrie Forbes that I bought last fall.

I changed boneless chicken breast into thighs with bones; more flavor as far as I am concerned.  I didn’t have orange marmalade so I used some of my homemade lemon marmalade.  I added some slices of lemon.  All to the good of the flavor parade.  It was addictively fantastic served over brown rice with a side of asparagus.  I made the rice the night before so all I had to do was heat my serving of rice and top with the hot chicken.

Another lovely easy meal is created in my magical time machine slow cooker!.  Not that pretty to look at, maybe slightly more handsome than the Peruvian chicken.  But oh the flavor!  Serves 4 if you can restrain yourself from eating more than one thigh.  I used 4 in my recipe; I think you could put in up to 6, less sauce per serving which I frankly object to as this sauce is the bomb! I ate it four days in a row and each night I couldn’t wait for dinner because of this sauce and this dish.  One of those recipes where the results seem more than the sum of the ingredients.

Citrus Chicken Thighs

4-5 chicken thighs

1 medium onion diced

½ cup orange juice; I made mine from concentrate

3 tbsp. orange or lemon marmalade

1 tbsp. brown sugar

1 tbsp. apple cider vinegar

1 tbsp. Worcestershire sauce (GF of course)

1 tsp. Dijon mustard

½ a lemon sliced in ¼ inch thick rounds

1 tbsp. cornstarch mixed with 2 tbsp. hot water

Grated rind of one naval orange

Directions

Spray the inside of your slow cooker with cooking spray.  Lay the chicken thighs in the bottom.  I left the skins on but I am sure you could remove them if that is your preference.  Top with the onions.  Mix the oj, marmalade, brown sugar, vinegar, Worcestershire sauce and mustard in a small bowl.  Pour over the chicken. Top with the lemon slices.  Cook 4 hours on high.  Add the cornstarch water mix, cook ten more minutes. Add the grated rind and stir. It’s that simple!  I serve it over rice.  I sided it with asparagus once and with a lovely salad of greens, european cucumber, chickpeas and avocado with my own vinaigrette another evening. Enjoy!
