Quick update. So I went back last week and got some Cheddar Brats at Lidls…a German supermarket located in Wilson Boro. A plus is that they are super cheap; $2.49 a six pack. So…the bratwursts were on the menu twice so far. Yummy; not too cheddary, juicy as well as mildly smokey. We had them with a version of tater tots called tater crowns; discs of crunchy potato bits. Less than 8 minutes to brown them lightly before diving in. I recommend these brats for a quick tasty meal. Pleaser for the 8 year old. Go get em!

I bought the package of 4 uncured Bavarian bratwurst at Aldi’s. They were pale and unexciting looking in the shrink wrap but when I pan fried them in a bit of olive oil they browned up nicely. Each brat was still juicy and tender with a delicate flavor I was very impressed with.
I have bought brats before at other grocery stores and found them rather dull and pedestrian. These are thinner, longer and far tastier. Uncured means they have less junk added in the curing process of many sausages. Definitely a yummy and healthy-ish choice for sausage in any recipe. They cook in about 8-10 minutes. They make a quick supper with some pan fried potatoes and a veggie. And grilling them is on the package as an alternative to the frying pan.I need try them on my grill. Maybe for camping next year…
They are imported from Germany and I have heard that they are very authentic compared to most of the brats made in the USA. I give these an A plus in every category. Enjoy!

I have a fantastic cookbook, all pies, nothing else. By Farm Journal, published in 1981 but it has the vibe of the 1950’s. Lots of interesting combo fruit pies and chiffon pies like you never heard of. I found this recipe for a chocolate rum pie. The pre-made cookie crust could sub in for a traditional pie crust which the recipe called for. I had all the ingredients except the crust ….but I thought it sounded tasty and worth a trip to the grocery store for the crust cookies, gluten free of course!
It was not hard to make either. I threw it together in three easy steps. It was one of those recipes where the sum of the ingredients is far tastier than the components would lead one to believe. Everyone devoured their slice. People took slices home. My mom was eager to keep a second slice….for tomorrow. This enthusiastic audience caused me to mention it on facebook. I got all these likes and a few hungry comments. The buzz of happy responses led me to decide to share my version of chocolate rum pie. I have renamed it Chocolate Almond Cloud Pie. That was four years ago….
The name came from the fact that it is as light as a fluffy cloud and from my love for my older sister who died five years ago. Margie’s love of pie was renown in our family and I am absolutely sure she would have adored this pie. Whip some up this week and woo your family with chocolaty goodness that should please everyone.
Notes: I used french brandy instead of rum as I was out of dark rum. I think cognac would be nice too. .I used 3/4 cup almonds as that’s all I had; worked great; I put 2 Tbsp. aside for topping and rest went on top of the baked cookie crust. You can just buy a crust.
I posted this back in the spring of 2014 and hadn’t made it since; a matter of just forgetting how amazing it tastes. Like eating a chocolate cloud….with puffs of cream and the crunch of toasted almonds. I used a hybrid crust when I made it yesterday; I was tired of my gf oreos; so I scraped out and discarded the filling and crunched up the cookies, I thought I was a bit short on cookies so I added 7-8 gingersnaps I still had from my last cookie crust. Crunched up and mixed with butter, baked into what became a flavor delight of a cookie crust! One of the best pies I have ever made. And I make a lot of pies….
Chocolate Almond Cloud Pie
1 pre-made chocolate cookie crumb crust, GF
1 pkg chocolate pudding, the kind you have to cook
2 cups whole milk
1 tbsp cornstarch
1 tbsp cocoa
1 tbsp dark rum
1 cup slivered almonds, divided
1 1/3 cup heavy cream, divided
4 Tbsp. powdered sugar
Pour the almonds into a frying pan, no oil and toast them, stirring constantly. Alternately you could do this in the oven at a low temperature but I prefer the frying pan. Stop when they are medium brown, try not to let too many get black on the sides.
Cook the filling; put 2 cups whole milk into a medium sized and heavy sauce pan, Then add the dry pudding mix, the corn starch and the cocoa. Stir with a whisk as it heats. Once the mixture is bubbling all over the surface turn off the heat and add the rum. Pour into a bowl, cover with plastic wrap and chill until cooled. Take ½ cup heavy cream and whip. Add this to the pudding and whisk until blended. Take 3 tbsp of almonds and set aside for garnishing the pie later. Sprinkle the rest of the toasted almonds over the chocolate pie crust Gently spoon the filling into the pie shell on top of the toasted almonds. Chill at least 2 hours until set and cold. Whip the rest of the heavy cream in a chilled bowl, adding the sugar near the end of the whipping. Gently put dollops of it all over the pie top. Sprinkle the reserved almonds on top. Enjoy!

Finding or baking decent gf bread can be problematic. Poor texture (think crumbly), slightly odd flavors, big holes in the middle of the loaf, leaden or brick like baked products, high prices and lots of ingredients which must be compiled exactly according to the recipe. It adds up to a fair amount of stress as to just having a sandwich.
A year ago I made some really interesting bread/rolls. The name is “cloud bread” (also called oopsie bread) and it has no flour, no oats nor any grains. I was intrigued when I saw this cloud bread popping up in my support group messages and just had to try it. My recipe has five ingredients but three should be in your pantry already. It was very easy, quick and yes; tasty. So it made a super bread for a ham and cheese sandwich and a ham/turkey and cheese sandwich. I ate one warm out of the oven, also enjoyable. Great with a little jam or jelly on top. Posted it back last March and sharing again so you who missed it can give it a try.
I added a couple toppings which add a lot to the flavor and look of it. I recommend them but it sure can be made plain. You have to use full fat cream cheese to make it work, only a few tablespoons so don’t get all freaked out over that issue!
3 eggs, separated
3 ounces cream cheese at room temperature
1 tsp. baking powder
1 tsp. honey
Toppings; sesame seeds and a tbsp. of chopped fresh rosemary.
Beat the egg yolks with the cream cheese until it is very smooth, lemon yellow. Add the baking powder and honey, beat in.
Beat the egg whites until foamy, add a sprinkle of salt. Beat until stiff peaks form. Fold together with the yolk mixture until mostly blended together.
While the egg whites were beating I lined a big baking sheet with parchment paper and sprayed it lightly with Pam. Heat oven to 300 degrees. Some people heat the pan in the oven before spreading the dough; I didn’t bother but feel free to preheat your pan.
Using a big spoon spread the bread mixture on in six big circles spaced 1-2 inches apart. Sprinkle with sesame seeds and or finely chopped fresh rosemary. Bake until golden brown between 20 and 30 minutes. Using a spatula separate them from the parchment paper. Let cool. Store in a ziplock bag overnight; they will get soft and be ready for sandwiches. Keep them in the fridge. I put slices of wax paper between them to avoid sticking. They keep about 3 days there and a week in the freezer. Wonderful for sandwiches: I used one for the top and a second one as the bottom of the sandwich. Did I mention they are virtually no carbs in this bread? Yeap; great for my low carbing friends!

If you follow my blog you might notice I haven’t posted many baked goods in the past month. As I mentioned the other week, I had my right knee replacement surgery the first week of March. Due to that I haven’t been able to do much cooking and even less baking. Just not able to stand around or work hard at anything other than my recovery which is going pretty well these days. I use a cane but in my house I often just walk all on my own. I’ve had lots of company, mostly siblings who came to help me out and to visit our mom who I normally spend time with each week. This worked out great and now I am on my own. While they were here people bought a number of things new to me and so I have been doing some product reviews. Here are two more, both triangular chips and both organic. In the interest of honesty I should say that throughout my recovery I have been actively seeking not to eat these sort of treats; too fattening/salty/addictive. I didn’t buy them but I sure couldn’t help myself to try more than a few of each chip.
I love tortilla chips and was excited when my brother bought a bag of Pink Himalayan Salt Red Rice & Quinoa Tortilla Chips by Lundberg in Ca. Everyone likes them but me and my beef is the salt. I guess my salt cutting back regimen for the past year or so is having a serious effect as I found these chips to be way too salty for my tastes. No one else felt that way; they were noshed on with joy by several of my visitors so get a bag and test them out! Non GMO, gluten free and whole grain…purchased at Giant Food Stores.
The other snack item I want to share with you are Popcorners, Crispy & Crunchy Popped Corn Chips, by BFY Brands in Liberty NY. Darn it, but I just love them! No preservatives, no trans fats, not fried, doubled pressed for extra crunch. I got the variety with some cheddar for flavoring. Thin, crisp but not hard and lightly cheesy: I could eat the whole bag in a day but I have restrained myself so far. These also came from Giant and I love that they have 7 ounces, the other ones were 5.5 so I got another ounce and a half plus they were a bit cheaper so double score on these triangular treats.
More and more tasty gluten free snacks are popping up out there in regular grocery stores; but do read the packaging carefully if you have allergies or want to limit sodium or other sorts of intake. Best not to eat the whole bag at one munching! Enjoy.
Aldi’s has something so yummy I am loath to share it with all of you for fear you will buy it all and I will be then crying the blues. It is their Dark Drizzled Kettle Corn. Lightly drizzled with dark chocolate, and not that sweet. Perfection in popcorn form. An addictive snack. It combines my deep love for dark chocolate with my frequent enjoyment of kettle corn. A one ounce serving has 140 calories. The label says GF. It also says limited edition, so get a few bags and tell the staff to tell the boss to keep ordering it and maybe, just maybe Aldi’s will keep it around!
Some people aren’t big fans of grits; this recipe could change that for ever as it is pretty easy and darn tasty. Not diet food; we are talking cheese and cream here. Still, I promise; you and yours will love grits after you whip up this luscious entrée!
I used frozen large shrimp; don’t use very small ones, lacking real shrimp flavor. My pantry didn’t have fancy country ham; just used some ham steak from the grocery store; was fine. My version has fresh tomatoes on it; love the addition. This is mostly naturally gluten free; just changed the white all purpose flour for the roux to rice flour. Use most any blend of gf flour you prefer. No bean flour though; that stuff is nasty for most things.
I ate some of it cold the next day; took it along for a lunch out. No microwave….still tasty cold. Enjoy!
Shrimp and Grits
1/2 pound (26-30 count) Wild Shrimp
1-2 tsp. Cajun seasoning
3/4 tsp. paprika
1/2 tsp. dried Italian seasoning
Freshly ground black pepper
1 cup water
1 gf chicken bouillon cubes
1 tablespoons butter or margarine
1/2 cup quick grits
1 1/2 tsp. tomato paste
3 oz heavy cream (a glass measuring cup has ounce marks on it)
1 2/3 ounces extra-sharp Cheddar; shred on large grater side
1 tablespoon butter or margarine
1 tsp. minced garlic
1-2 tablespoons rice flour
1/2 cup chicken stock
2 tbsp. heavy whipping cream
1/4 teaspoon Worcestershire sauce
1/4 teaspoon hot sauce (recommend: Texas Pete)
¼ cup sugar-cured country ham diced
1 ripe tomato diced
First, peel and devein the shrimp. In a small bowl, combine Cajun seasoning, paprika, Italian seasoning and salt and pepper, to taste. Sprinkle the spice mixture over the shrimp to coat well and set the shrimp aside while you get all the ingredients ready for the grits and sauce. You want the shrimp to stand at least 4-5 minutes before you fry them so the flavors soak in somewhat.
Now saute the shrimp in a large saute pan: melt 2 tablespoons of butter, add minced garlic and stir for 30 seconds. Add in the spice-coated shrimp, and cook only until they’re just done and tender. Don’t overcook. Remove the shrimp from the saute pan and set them aside in a bowl.
The roux is next. With all those wonderful drippings from the shrimp in the saute pan, add 1-2 tablespoons of rice flour and stir with a wooden spatula to make a roux. Start with one and add more if you think there is enough butter and drippings to mix with it. Cook for 10 to 12 minutes until roux reaches a medium-tan color, then slowly add the chicken stock and heavy whipping cream. Whisk together and cook for 2 minutes, then whisk in Worcestershire sauce and hot sauce. Set aside.
Next, while the roux cooks, make your grits. In a medium saucepan, bring water, chicken bouillon cubes and 2 tablespoons butter to a boil. Slowly add the grits, whisking often with wire whisk for 5 minutes. Add tomato paste, cream, and cheese. Keep whisking for another 2 or 3 minutes until the grits become creamy. Don’t skimp on the butter and the cream, it gotta have that good stuff so you have that great taste!
And last, toppings. Cook 1 center slice of cured country ham in a saute pan, and cut into cubes. I used a ham steak from the store and cut it in small cubes and sauteed it briefly before mixing it with the shrimp. Dice the tomato up.
To serve place 2-3 heaping spoonfuls of steaming cheese grits onto a place, top with half the shrimp and half the ham cubes. Drizzle that yummy roux sauce over top of the shrimp, and sprinkle on half that chunked up tomato. Enjoy this little bit of that world famous Southern cooking even up here in Pennsylvania!
