Blueberry Peach Crumb Pie – Delicious for Dessert

It is the peak of peach season and blueberries are still in every grocery store so this was a perfect pairing for adaptation to a gluten free pie recipe.   The resulting pie was juicy and flavorful down to the last slice.  We had one this past weekend for a birthday party.

This is an easy pie to create.  Slice and dump together the filling, crumb topping made in mixer bowl you used for bottom crust. You can store any leftover crumb mixture in a sealed container in the fridge; it keeps a few weeks.  This GF crumb topping is perfect for most any fruit pie.  If you prefer a solid crust just double the crust part and top your pie with it.  Be sure to cut some slits for steam escape! I think a lattice crust would be fantastic if a bit more time consuming to construct.

Please make every effort to use local fruit; can get peaches at most farm stands and at farmer’s markets; one on Sunday’s in Hellertown.  This pie really showcases the blueberries more than the peaches. But store peaches can be poor due to chilling so I strongly suggest you get locally grown sweet ripe peaches to make your pie.

To peel; heat 3 inches of plain water, drop the peaches gently in and cook them 1-2 minutes.  Allow to cool somewhat before peeling.  I like to do that over a bowl to catch the juices as I slice each peach.

Bake and enjoy early summer in a pie in just a few minutes of work.  Don’t eat it piping hot; it should be cooled to room temperature or even chilled.  You could certainly serve this with vanilla ice cream.

And this pie works perfectly with fresh nectarines or apricots.  Bonus: no peeling required!  I have to confess I love to make it with nectarines for that reason.  The apricot version is really flavorful so if you ever get about a quart of apricots this is a great recipe for a pie.

Angie’s GF Blueberry Peach Crumb Pie

Crust:

1 c plus 2 tbsp brown rice flour mix (at bottom of recipe)

2 Tbsp sweet rice flour

1 Tbsp. granulated sugar

½ tsp xanthan gum

¼ tsp salt

6 Tbsp. cold butter cut into 6 chunks

1 lg egg

2 tsp fresh orange or lemon juice

Spray 9 inch metal pie pan with cooking spray, dust with white rice flour.

Mix dry ingredients in bowl of stand electric mixer.  Add butter and mix until crumbly and resembling coarse meal.  Add egg and juice.  Mix until it comes together into big chunks.  Shape into a ball with your hands. Put it on a crust sized piece of wax paper (14 x 14 inches more or less), flatten the crust ball some; put on top of it another piece of wax paper and chill it all in your fridge 15-20 minutes while you prepare the filling.

Filling:

2-3 cups sliced fresh peaches, peeled and cut in thick slices

3 cups fresh blueberries – place in medium bowl

Mix with:

½ cup sugar

½ tsp. cinnamon

¼ cup quick tapioca

Add and stir in

2 tbsp. fresh lemon juice

Let stand while you prepare the crust.

Roll out pie crust in a pie bag or between the two sheets of wax paper, try to get the thickness even, no thick middle! Peel off one side of paper and place in pie pan, centered.  Remove other slice of wax paper.  Crimp edges all around.  Fill with fruit mixture.

Crumb topping

Put all four ingredients in the same mixing bowl you made the bottom crust in and mix well with mixer paddle until crumbs form.

¾ c brown rice flour mix

½ c sugar

½ tsp xanthan gum

1/3 c cold butter cut into six chunks

Sprinkle the top of the pie with crumb mix; use as much as you like (all is fine!).  I like about a heaping cup of the mixture.  Up to your personal taste… It sinks partially into the fruit mixture and adds lots of sweetness and eye appeal.

Bake in a preheated 400 degree oven for 45-50 minutes until bubbly and the crumb crust is light brown. You can put a pie juice catcher under the pie as it might bubble over.  This protects the oven bottom from a mess. I put a piece of aluminum foil on top for the last ten minutes.  Cool at least 2 to 4 hours before serving at room temperature.  I think it is best served the same day you make it, or no more then 10 hours after baking for optimal flavor.  The crumbs will get soggy if too much time passes.

Note: if you find your bottom crust is not browning enough bake it empty at 375 degrees for ten minutes before filling it with the fruit.  I have a bottom heat pizza style oven which gives me perfect pie crust so I don’t ever have pale pie crust.

2/3 c potato starch – Not potato flour!

Blueberry Pancakes, GF AND Yet Fat and Sassy!

Who know it would be so difficult to find a really tasty gf pancake recipe?  Tried a few and found some too dry and some too bland.  It took me just about 2.5 years to find ones I really liked.  Fat, tender and flavorful.  I don’t miss my old wheat based pancakes anymore.  Plus these are super easy to make; dump and stir.  Sorry, no ready made box mix used here but I am considering making a dry mix version of this recipe so I can blend them together in a hurry.  Soon, when I can find the time to figure out the way to do it best, then I will be ready to make almost instant pancakes from scratch!They are from Elizabeth Hasselbeck’s cookbook.  I am generally not a fan of celebrity cookbooks but this recipe is worth sharing.

So try these and you will find them to be fat and utterly yummy.  I put blueberries in mine but they are good plain and would taste fantastic with chocolate chips added on top! My three year old grandson loved them the other week.  We sprinkled a little cinnamon in our batter too.

Elizabeth’s GF Pancakes

1 cup sweet sorgum flour

½ cup sweet rice flour

¼ cup tapioca flour

2 tbsp. sugar

2 ½ tsp. baking powder

1 tsp. guar gum

¼ tsp. salt

———

1 2/3 cup 2% milk

2 eggs

½ tsp. vanilla

4 tbsp. butter; melted plus more for griddle frying

Topping: ¼ cup fresh blueberries, sprinkle of cinnamon

Directions: Whisk the dry ingredients in a large bowl.  Mix the next three ingredients in a small bowl, whisk well, mix in the melted butter, whisk.  Pour into the dry ingredients, mix with whisk just until no dry shows.  If the batter looks too thick add 1-2 more tablespoons milk and stir up. I heat the griddle while I do the mixing so it is all ready when the batter is mixed; it doesn’t keep well; to get the fattest puffiest pancakes the secret is mix briefly and you have to bake them right away.

Heat griddle until hot, add some butter, I like to use a big kitchen spoon to measure and I do 3 or 4 pancakes on my cast iron griddle at a time. Sprinkle 3-5 berries on top of each pancake and add a sprinkle of cinnamon.  Let them cook until the edges look set; about 2-3 minutes.  Turn with flat spatula turner.  Let cook 1-2 more minutes.  Do not flip again.  Serve with maple or blueberry syrup.

Blueberry Crumb Muffin – Bluedelishous!

Oh….the muffin saga unfolds further…what flavor shall I make for snack time?  Turning to my trusty muffin recipe I went for a classic: blueberry crumb. So easy: think I can almost do it in my sleep! That’s why the basic muffin recipe is my go to baked snack. They are always tasty and far cheaper than GF muffins you can buy.

This batch of muffins was delightful: delicate texture yet slightly crunchy outside with the sweet blueberry flavor and just enough sugar for me.  I used a bag of fruit straight out of the freezer -don’t defrost them before adding.

The streusel topping insures that they look gorgeous and adds an extra layer of flavor.  There are walnuts in them to so you get some really great nutrients from the fruit and nuts.  Not much guilt in eating one of these treats! You swapped the white sugar for coconut palm sugar which is very low as far as raising blood sugar.   I did add an extra 2 tbsp. of milk because of the coconut palm sugar. They come out slightly darker if you use that special sugar.

I took a few snaps as I made the batter.  I warmed my cold eggs in a bowl of warm tap water; took only a couple minutes to bring them close from icy cold to room temp.  Great if you forget to get out the eggs early for warming up on the counter.  In a second photograph I show how I pour the milk in a glass measuring cup and add the canola oil right on top. And the third shot is of the frozen blueberries before mixing in, don’t defrost them! Finally; do make the streusel topping before you mix up the batter as that batter goes together in a few moments so have your topping ready to press into the batter in the muffin tins.

I love how healthy these muffins are and the envious looks people give me when I chow down on one as they eat some snack full of preservatives, sugar and who knows what. People are envying ME and my GF treat…Love how being gluten free can be so yummy and easy when you plan ahead and bake your own snack treats. Blueberry Streusel Muffins

2 cups brown rice flour mix (see below)

2/3 cup granulated coconut palm sugar or granulated sugar

1 tbsp. baking powder

1 tsp. baking soda

¾ tsp. xanthan gum

¼ tsp. salt

1/2 tsp cinnamon

1 1/3 cup fresh or frozen blueberries

1/3 cup chopped walnuts

2 large eggs

½ cup milk, 1 or 2 percent plus 2 tbsp more if you use the palm sugar

½ cup canola oil

Topping: Mix the following in a bowl, make sure the butter is in tiny pebbles; use your fingertips to blend.

½ cup rolled oats

¼ cup brown sugar

2 tbsp. almond meal

1½ tbsp. butter

¼ tsp. cinnamon

Directions: Heat your oven to 375 degrees, placing the rack in middle of oven.  Spray muffin pans with cooking spray.  One batch makes 14-16 muffins.  I got 16 when I made them.

Mix all dry ingredients in bowl of stand mixer or big bowl Add fruits and walnuts; stir to coat them with dry mix.  Combine milk and oil.  Beat in eggs, add vanilla.  Add liquids to big bowl; stir just until blended.  It is a very thick batter.

Fill muffin pans 2/3 full.  I use a big metal serving spoon and fill it about half way to dump in each muffin space. Sprinkle the top with the topping. Press it in a bit so it won’t all flake off after baking. Bake 21-23 min until golden brown. Do not over bake or they will taste dry.  Remove immediately from the pans and cool on a rack.  They freeze well for a few weeks, if they last that long.  Keeps in fridge (well wrapped) or an airtight cookie jar for 2-3 days.

Raspberry Blueberry Muffin Madness!

Oh….the muffin saga continues. What shall I make for snack time?  Turning to my trusty muffin recipe I try a new variant; raspberry blueberry. Knowing I will get a similar texture to the cranberry blueberry if I use the same easy to dump together recipe. So easy: I think I can almost do it in my sleep! That’s why these fruity muffins are my go to baked snack; they can be quickly throw it together, dependably yummy and it is simple to vary the flavor depending on what fruit is available. I mention all this that so you can feel comfortable making your own version of them.  They are always tasty and far cheaper than GF muffins you can buy.spagetti and raspberry muffins 001

This particular batch of muffins did not disappoint: delicate texture yet slightly crunchy outside with zingy raspberry and sweet blueberry flavors and just enough sugar for me.  I used a bag of mixed fruit straight out of the freezer and picked out all the mango pieces leaving blueberries and raspberries -don’t defrost them before adding.  Slightly devious but I will enjoy the mango chunks later in a fruit salad. You can buy a bag of whatever berries float your boat or fit your budget

Cranberry Blueberry Muffin Treats

Oh nuts, we are out of muffins….again.  That’s no good! I didn’t go far from my favorite recipes to make these, possibly my favorite muffins of all time. This is a riff on my fall of 2014 take on a muffin recipe out of Annalise Robert’s cookbook; Gluten-Free Baking Classics; her blueberry muffins but with a special topping. If you are looking for a great source recipe book this is it: her gf quick breads are particularly delicious, all my gluten loving friends and family enjoy them.  I made her brownies this past weekend; always perfection and rapidly devoured.

I have a confession to make: I have never been a big fan of cranberries.  Until this winter! I decided to experiment with them and found that they play very well with a variety of fruits for muffins, tarts, pies and crisps.  The cranberries brighten the flavor and add a lovely rosy color.  Do look beyond your prejudices to their sharp flavor and give them a second try.  I am so glad I did.

I used frozen fruit; easy to get in the winter, don’t defrost them before adding. The streusel topping insures that they look straight from a gluten free bakery.
